Leftover Turkey Noodle Soup

Leftover Turkey Noodle Soup – homemade turkey broth from the leftover turkey carcass, loaded with turkey and noodles. Perfect use of that leftover turkey.
Well it’s cold outside, and it’s white and pretty. But I mean super cold, like – 20 degrees C (-5 degrees F). It’s also full blown soup weather. And I love it. Seriously. I love everything about it.

And I, like many of you my dear friends, roasted a turkey. A big turkey and now we’re struggling with the leftovers. But I have the perfect solution for you. Ahem, I mean recipe. You need this recipe in your life. Especially if it’s cold outside. Leftover turkey noodle soup, just the sound of that makes me all happy inside. But this is why I love this time of year. I love soup. I love to eat soup with some nice crusty cheesy bread. I love to curl up on my super comfy recliner, with a nice big bowl full of noodle soup loaded with turkey and watch Christmas with the Kranks or whatever Christmas movie happens to be on TV. I really am a simple girl. Oh and a glass of Moscato wine, yeah, that’s it.
h yes, the soup. Well the soup is a piece of cake to make. Or piece of turkey. Yeah, I used the carcass from the turkey, pulled all the meat from it and made my own broth. Not hard at all, all you need to do is cook the carcass with water, an onion, a few carrots and some celery sticks for about an hour and a half and you end up with the most delicious turkey broth ever. Not to mention it fills your kitchen with amazing aromas and whoever walks in your kitchen will think you’re cooking some fancy meals.

But that’s what I love about this soup, it’s simple. You can add as much turkey as you want and it can be dark and/or white meat. I also used these Asian Egg Noodles I had, about 8 oz of them, because I love lots of noodles in my soup. You get an amazing turkey flavor to this soup from making your own broth from a turkey carcass, but if you want you can of course use store bought chicken broth or turkey broth.

So there you have it. A super satisfying turkey noodle soup, such a great use of all that leftover turkey.

Ingredients
For the Broth
  • 1 turkey carcass, leftover from a carved turkey, all meat removed
  • 14 cups water
  • 1 large onion, peeled
  • 3 carrots, peeled and cleaned
  • 2 celery sticks, washed
  • salt and pepper to taste
For the Soup
  • 2 to 3 cups of turkey meat, chopped, white or dark
  • 8 oz dry egg noodles
  • 1 bouillon cube or 2 tbsp Vegeta
  • salt and pepper to taste
  • parsley, chopped
Instructions
  1. In a large soup pot, add turkey carcass, water, onion, celery sticks and carrots. Season with salt and pepper. Cook for about 1½ hours.
  2. Remove carcass and everything else from the soup, using a mesh strainer or a slotted spoon, keep the carrots. All there should be left in the pot should be the broth. Add turkey meat noodles to the pot. You might need to add a couple more cups of water as some of it may have evaporated. Chop the cooked carrots and add to pot. You can also chop the cooked celery and add to the soup, but I'm not a fan, so I skipped it. Season with salt and pepper and add the bouillon cube or vegeta. Cook for another 8 minutes until noodles are cooked.
  3. Garnish with parsley.
